Ingredients

For Palak Dal

  • 1/2 cup yellow moong dal (or toor dal)
  • 2 cups fresh spinach (palak), washed and chopped
  • 1 medium onion, finely chopped
  • 1 medium tomato, chopped
  • 2 green chilies, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 tablespoon oil or ghee
  • salt to taste
  • water
  • Fresh coriander leaves for garnish
  • 1/2 teaspoon lemon juice (optional)

For Multigrain Roti

  • 1 cup multigrain flour
  •  salt
  • Warm Water as needed
  • 1 teaspoon oil

Step-by-Step Process

Step 1: Cook the Dal

  1. Wash the dal 2-3 times.
  2. Add dal,turmeric, and water to a pressure cooker.
  3. Cook for 3-4 whistles until soft.
  4. Mash the cooked dal lightly.

Step 2: Prepare the Palak

  1. Wash spinach thoroughly.
  2. Chop it into small pieces.
  3. Keep it ready for cooking.

Step 3: Make the Masala

  1. Heat oil or ghee in a pan.
  2. Add cumin seeds and let them crackle.
  3. Add chopped onions and cook until light golden.
  4. Add ginger-garlic paste and saute for 1 minute.
  5. Add tomatoes, green chilies, turmeric, red chili powder, and salt.
  6. Cook until the tomatoes become soft.

Step 4: Add Spinach

  1. Add chopped spinach to the masala.
  2. Cook for 3-4 minutes until the spinach softens.

Step 5: Combine Everything

  1. Add the cooked dal to the spinach mixture.
  2. Mix well.
  3. Simmer for 5-7 minutes.
  4. Add lemon juice and garnish with fresh coriander.

Multigrain Roti

Step 1

Mix multigrain flour and salt in a bowl.

Step 2

Gradually add warm water and knead into a soft dough.

Step 3

Cover the dough and let it rest for 15 minutes.

Step 4

Divide the dough into equal balls.

Step 5

Roll each ball into a round roti.

Step 6

Cook on a hot tawa until both sides have brown spots.
